Great wine has always been key to the Goodman experience. As a modern, American-style steakhouse, we lean towards California… but never to the exclusion of other great wine-producing countries.

Thanks to Shane, our Group Wine Buyer, our wine list emphasises quality, the iconic, the new, the high class and the sustainable. Our mission covers the entire wine-producing world, some lesser-known vineyards and some surprising countries. We are also one of the few restaurants to be named an official partner of Petrus.

Each of our restaurants has its own wine team and, based on their own tastes and reacting to guest preferences, a different, distinct wine list. At Mayfair, Alice favours South Africa and Bordeaux. Over at City, Ilenia’s preferences are to the funkier, new-wave side of California – some unusual varieties from newer appellations – while Tim, at Canary Wharf, leans towards his German roots, and lesser-known parts of Burgundy.

As for the Californian side of the Goodman wine list, it’s not only Napa and Sonoma but beyond there, expanding into lesser-known regions such as the Carmel Valley, the Central Coast and the Sierra Foothills.

Meet Shane

Shane McHugh is Goodman’s Group Wine Buyer and Head Sommelier. His CV includes stints in the USA, at The Savoy, and working in two of Gordon Ramsay’s Michelin-starred restaurants in London – and all before the age of 30. Having moved to Goodman in 2019, Shane is working on taking the Californian connection to the next level and maintaining each restaurant’s independence: “each restaurant has its own wine list,” he explains, “because the guests, and our team, have specific tastes and opinions.”
